Description

My boys love these carrot fries hot out of the oven. I like baking them as it eliminates the messy splattering that results from the typical preparation of French fries: frying.

Ingredients

  • 6 whole Large Carrots
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Celtic Sea Salt

Preparation

Cut each carrot into 2-inch long sections. Cut each section into thin sticks.

In a large bowl toss carrot sticks with olive oil and salt. Spread out carrot sticks on a parchment paper-lined baking sheet.

Bake at 425° for 18-22 minutes until carrots are browned.

Loved these. I’m not a big veggie eater so fooling myself into eating carrots this way was great.

Mixed these in with sweet potato fries, and my kids didn’t even notice! These are awesome!

I served these carrot fries to my inlaws and MIL was very impressed that the carrots had such a natural sweetness to them. Roasting vegetables has become my new favorite way to cook and I am glad to add a different version of carrots to our meals.

I tried this recipe last night. I adore sweet potato fries and the carrot fries looked, smelled, and even tasted similar. It was an easy and tasty snack.
