Healthy and easy homemade fig jam with an orange twist.
Put the chopped figs, coconut sugar (or honey or agave syrup) and water in a pot and bring to a boil. Then turn the heat down to low and simmer for about 20 minutes or until the figs are very soft, stirring occasionally. If the water evaporates too much, add some more just to to keep the figs simmering.
When the figs are soft and mushy, transfer them into a food processor. Add lemon juice, orange juice and a pinch of salt. Puree until smooth. You can add chia seeds if you want a firmer or chunkier texture or consistency. (I usually add the chia seds for the extra fiber and antioxidants.)
When the jam is ready, let cool and store in an airtight glass container in the fridge.
