These cookies are so loaded with ‘good for you’ that you can totally justify eating them for breakfast! With a glass of milk, of course!
Preheat oven to 350 F.
In a very large mixing bowl (or preferably your stand mixer bowl fitted with the cookie paddles), combine the eggs and sugars. Mix well. Add the salt, vanilla, peanut butter and butter. Mix well. Stir in the remaining ingredients and mix until combined.
Using a medium size cookie scoop, drop dough on a parchment lined cookie sheet, spacing them about 2 inches apart. Bake for 11 minutes. Do not over-bake. Remove from oven. Let them cool for about 5 minutes on the cookie sheet before transferring to a wire rack to cool.
