Description

Meatloaf Cupcakes with Mashed Potato Icing and green onion sprinkles! Because … why not? These are a kid favorite at our house!

Ingredients

  • 1 pound Lean Ground Beef
  • 1 whole Egg, Slightly Beaten
  • ¼ cups Gluten Free Panko Breadcrumbs
  • 2 sticks Mozzarella String Cheese
  • ¼ cups Gluten-free BBQ Sauce
  • 2 cups Mashed Potatoes
  • Sliced Green Onions, For Garnish

Preparation

For the meatloaf:
Mix beef, egg, and panko together. Place about half the mixture in cupcake tin wells (I’ve also used silicone cups on a baking sheet).

Cut string cheese in quarters and place on top of meat, pressing down lightly, making sure not to push it down too far to the bottom. Place remaining meat on top of each cupcake, sealing around the edges so that cheese doesn’t ooze out.

Bake at 350ºF for about 30–35 minutes, depending upon your preference. I know someone who likes them almost burned—to each his own, I say!

During the last 5 minutes of baking, top with bbq sauce and put back into oven for the final 5 minutes.

For the mashed potato icing, I put my mashed potatoes into a pastry bag and pipe it on just like icing. Then top with some sliced green onions!
