Easy to make, healthy, gluten-free, vegan and so much tastier than store bought!
Preheat oven to 300 F. Place almonds on a baking sheet and toss with maple syrup and 2/3 of the coconut oil. Spread them in an even layer. Roast for about 25-30 minutes, stirring halfway through. Remove from oven. Let them cool for 10 minutes.
Place roasted almonds into food processor and process until smooth. You’ll need to stop and scrape down the sides. This should take about 5 minutes. Once creamy, add vanilla, cinnamon, salt, and the remaining 1/3 of the coconut oil and process until well combined.
