After having to become gluten-free and dairy-free, it gets challenging to find yummy and easy dinner recipes. This is gluten-free and you decide how much dairy to add with garnishes. This is a stovetop one-dish wonder. It’s super simple to double and is really filling.
Brown the hamburger and onion in a large skillet. Drain the fat if you wish, but if you’re using super lean hamburger there won’t be enough to worry about. Stir in the taco seasoning. Dump in the corn, black beans, and tomatoes. (I had leftover rice so I threw that in, too.) Cook until heated through and flavors blend. Scoop into bowls and top with any combination of Fritos, cheese, salsa, sour cream, cilantro, and/or avocado.

Thanks for sharing, always looking for something my 11 year old grandson will like. He has to eat Gluten Free, so I am always on the lookout for something new.
