Sweet and healthy cookie dough bites packed with protein and just right for a snack or late night craving. No eggs, oil or butter and they’re gluten-free and paleo!
Combine cashew butter, oat flour, protein powder, dates, almond milk, and syrup in a food processor. Pulse until it comes together to form a soft dough. Add more almond milk if needed.
Using a rubber spatula, mix in the dark chocolate chips. Place the dough in the freezer for 1 hour before rolling into balls.
Roll into 1-inch balls and store in freezer for up to 3 months.
