Description

Sweet and a little bit tart, perfect for your gluten-free guests!

Ingredients

  • FOR THE BASE:
  • 4 cups Green Apples, Cored And Sliced Thin
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Cornstarch
  • 3 Tablespoons Organic Sugar
  • 1 pint Raspberries
  • FOR THE TOPPING:
  • ½ cups Quinoa Flakes
  • ½ cups Organic Brown Sugar
  • ¼ cups Gluten-free All-purpose Flour
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Salt
  • ½ teaspoons Xanthan Gum (optional)
  • ¼ cups Earth Balance (or Butter) Cut Into Small Cubes

Preparation

Preheat oven to 375ºF.

Place sliced apples in a pie plate. Add the lemon juice, cornstarch and sugar. Mix with your hands. Place raspberries on top of apple mixture.

Now prepare the topping. In a medium-sized bowl, place the quinoa flakes, brown sugar, gluten-free flour, cinnamon, salt and xanthan gum (if using). Stir the dry ingredients together. Now add the butter, and work it in using a pastry cutter or a fork. You want the topping to be crumbly.

Sprinkle the topping over the apple-raspberry mixture, put it into the preheated oven and bake for 35 minutes. Serve with ice cream.
