Description

This 7-Ingredient Gluten-Free Banana Cake is baked and ready to eat in under an hour!

Ingredients

  • ⅔ cups Sugar
  • 3 whole Very Ripe Bananas
  • 3 whole Large Eggs
  • 3 cups Almond Flour (I Used Bob's Red Mill)
  • 2 teaspoons Baking Powder
  • ½ teaspoons Kosher Salt
  • ½ cups Chocolate Chips (optional But Let's Be Real Here)

Preparation

Preheat oven to 350ºF and grease a 9×13 cake pan, or line with parchment paper.

Combine sugar and bananas in a large bowl with a fork, mashing until smooth. Add the rest of the ingredients except for the chocolate chips to the bowl. Stir until completely combined. The batter will be a bit grainy from the flour.

Spread batter into prepared pan and top with chocolate chips. Bake for 30 minutes until just set in the center and golden at the edges.

Let cool in the pan, or lift out after 10 minutes if you used parchment paper. Slice, serve, high five healthy choices.

Note: Your therapist said this is fine for breakfast. It’s made with almonds, for crying out loud.

I made this two days ago. The recipe is easy and my husband said it seemed to taste sweeter the second day.

The cake comes out moist, and the mini-chocolate chips I used (what I had on hand) stay nicely melty even after it cools.

I’ll definitely be making it again!
