Quite simply the most delicious but simple, fresh and zingy gin lemon curd! The ultimate treat on toast on a lazy Sunday morning with a pot of Earl Grey.
In a heatproof bowl, add lemon juice and zest, caster sugar, butter and gin. Place bowl over a pan of gently simmering water. Make sure water is not touching the bottom of the bowl. Gently stir mixture until all of the butter has melted.
In a small bowl, add eggs and lightly whisk. Gradually add beaten eggs into melted butter mixture, whisking as you add them. Keep whisking mixture over simmering water for about 10 minutes. The mixture will start to thicken like custard.
When mixture is creamy and coats the back of a spoon, pour curd through a sieve into a jug. Transfer lemon crud into sterilised jars. Leave to completely cool before putting lids on.
