Description

Maybe you are thinking, is it even possible to make tortillas from cauliflower? Yes it is, and they are great. These are a great substitute if you are gluten-intolerant or if you’d like to try something different. All you need is grated cauliflower and eggs. You will be amazed by the taste.

Ingredients

  • 1  Cauliflower
  • Salt And Pepper, to taste
  • 2  Medium Eggs

Preparation

Grate cauliflower finely and put it in a bowl. If you like, you can add a pinch of salt and pepper. Put the grated cauliflower in the microwave for 4 minutes (stir after 2 minutes) or steam cauliflower for 5 minutes.

Preheat oven to 400℉ (200℃).

Transfer cauliflower onto a kitchen towel and squeeze out all of the moisture. Be careful, this can be very hot! Transfer cauliflower into a bowl and stir thoroughly.

Whisk eggs in a separate bowl. Add about half of the eggs to the cauliflower and stir. Add remaining eggs to the cauliflower and mix some more. (If you use large eggs, add about 1 ¾ of the egg mixture, else the cauliflower will get too wet.)

Lind baking tin with parchment paper. Shape cauliflower on the parchment paper into tortillas using a spoon. Bake for 20 minutes. Remove cauliflower tortillas from oven and let cool slightly.

Heat a nonstick pan to medium heat (no oil or butter required). Cook the tortillas in the pan until nice and brown on both sides. Serve immediately.
