I hadn’t thought of making coconut milk from shredded coconut until I read Sarma Melngailis’ book Living Raw Food. This recipe is a little messy to make. However, I like it since it’s a heck of a lot easier than cracking open a fresh coconut and scooping out the “meat,” etc. And, it helps me avoid canned coconut products.
Soak coconut in water for 1-2 hours (do not discard water). In a Vita-Mix, combine coconut, water, vanilla and stevia and process on highest speed. Strain liquid through a fine mesh paint strainer bag, discarding solids. Serve.

I can’t wait to try this milk. I make almond milk often in my Blendtec (actually my 6yo is in charge of the ‘milk’).
I strain my almond milk with two layers of cheese cloth and it really takes out the pulp. I’ll do this with my coconut too.
Thanks for the recipe.

What a great idea! A fine mesh paint strainer bag? Really? Is that food safe? How would you find out? I wondered about just that recently when I accompanied my husband to Miller Paint – I was in the throes of yogurt making, and casting about for something to strain my yogurt with (settled on a gold coffee filter, ultimately). Do you suppose it is possible to process this in a Cuisinart? I know, I’m just full of questions, but this is just so doggone intriguing! I love the idea of having pantry alternatives.
