This healthy and simple Cucumber Salad is best in the summertime, when its impact is extra refreshing.
Cut the cucumber into ¼ inch slices. Place in a medium bowl. Cover with vinegar and sprinkle with salt. Serve.

Very similar to the one my mom and I make. It is my ABSOLUTE favorite!! The only difference is we use red wine vinegar. Make me happy! =)

This is my favorite salad! You have to try it with Nakano’s Seasoned Rice Vinegar (Oriental Foods aisle of the supermarket). I love to let the leftover cucumber salad marinate over night in the fridge. The cukes are not longer crisp but I cut them up and add them to our green salad. YUM!
