Corn flour and starch give this blend extra protein and a great well-rounded flavor.
Mix thoroughly and store in an airtight container. Shake the container before each use. This, of course, can be doubled, tripled, etc. as per your usage.
Use 1 teaspoon of xanthan gum or plain gelatin per cup of mix to substitute for wheat flour. In recipes like cakes and cookies, add an additional egg for chewy texture.
