Just in time for the holidays—Gluten Free Cinnamon Bun Muffins!
Cinnamon Topping
1. To make the cinnamon topping, combine agave, cinnamon and oil in a small bowl.
2. Set the mixture aside.
Muffin Mixture
1. Combine almond flour, coconut flour, baking soda and salt in a medium bowl.
2. In a large bowl, blend together oil, agave, eggs and vanilla.
3. Blend dry ingredients into wet and scoop a scant ¼ cup at a time into lined muffin cups.
4. Spoon topping onto muffins.
5. Bake muffins for 8-12 minutes at 350°.
6. Cool muffins for 2 hours, then frost with Creamy Cream Cheese Frosting (stay tuned for the recipe!).

You can find almond flour and coconut flour at most grocery stores. I’ve found it at Fred Meyer and Safeway (live on the West Coast, not sure where you are). You can also find every kind of baking flour at http://www.azurestandard.com. It’s a great resource for organic and “special” diet foods. These muffins look great!

No you cant find those flours at the regular grocery store.
I used to get mine at whole foods and they do have the agave by the gallon too (great for diabetics) if there isn’t one in your area i would suggest calling the health food stores in you area.
I have a very strong blender so I purchase almonds and make my own flour much much cheaper this way.
I agree with you, this recipe is going to be in my bag of goodies for sure.

These look really yummy and I have some Agave nector I didnt know what to do with. However, I am not familiar with almond flour or coconut flour. Is this something I can find at a regular grocery or more likely at a health food store?
