Chocolate matcha energy bites are a naturally sweetened, caffeine-filled snack perfect for the mid-afternoon.
Add whole almonds to a food processor and pulse for 1 minute, or until finely ground. Add dates, cocoa powder, match powder and vanilla extract to the food processor. Process until a dough forms, about 1–2 minutes.
Form the dough into 12 evenly-sized dough balls and place on a baking sheet. Refrigerate for 30 minutes and serve. Or store in the fridge in an airtight container for up to a week.
