Description

Sweet and chewy blueberry almond granola bars. Packed with wholesome ingredients, these bars are great for breakfast or a snack. No baking required.

Ingredients

  • ¼ cups Coconut Oil, Divided
  • ¼ cups Blue Diamond Oven Roasted Blueberry Almonds
  • ¼ cups Blue Diamond Salted Caramel Almonds
  • 1-½ cup Rolled Oats
  • 1 cup Puffed Cereal (puffed Quinoa Or Puffed Millet Is Ideal)
  • ½ cups Dried Blueberries
  • 1 teaspoon Vanilla
  • ¼ teaspoons Salt
  • 2 Tablespoons Flax Meal
  • ½ cups Unsalted Almond Butter
  • ¼ cups Honey
  • 1 Tablespoon Caramel Sauce (optional)

Preparation

Over medium-low heat, melt 2 teaspoons coconut oil in a medium skillet and toast oats for 4–5 minutes, stirring frequently. Roughly chop almonds.

In a large bowl, combine oats, puffed cereal, almonds, blueberries, vanilla, salt, flax meal, remaining coconut oil, almond butter, honey and caramel sauce. Mix to combine.

Cover an 8×8 inch baking dish with parchment paper or plastic wrap. Spray with cooking spray. Transfer mixture to the dish and press it to pack it tightly. Refrigerate for 1 hour.

Cut into 8 bars. Keep refrigerated for up to 10 days.
