Description

This Cauliflower Rice recipe is a tasty, nutritious, grain-free, alternative to white rice for those of us who follow a Primal or Paleo eating plan.

Ingredients

  • 4 Tablespoons Olive Oil
  • 1 whole Medium Onion, Diced
  • 1 cup Celery, Finely Diced
  • 1 head Cauliflower, Trimmed And Coarsely Chopped
  • ¼ teaspoons Celtic Sea Salt

Preparation

In a large skillet, heat olive oil over medium heat. Saute onion over medium heat for 10 minutes, until soft. Add celery to skillet and saute for 5 minutes.

Meanwhile, place cauliflower in a food processor with the “S” blade and process until the texture of rice.

Add cauliflower to skillet, cover and cook 5-10 minutes, until soft, then add salt.

Sounds good! We also “mash” cooked cauliflower with our food processor. Gives the comfort of mashed potatoes without the potatoes!

This is awesome! My new favorite way to eat cauliflower! I had a pretty large head of cauliflower so I added a couple extra tablespoons of olive oil. Also, after I added the cauliflower it seemed dry to me so I also added about 3/4 stick of butter while the cauliflower was cooking. I’ve made it twice now since Saturday, so yummy. Thanks for sharing this recipe Elena!
