If you have ditched unhealthy cereals due to lack of nutrients, highly processed ingredients, or too much gluten, it’s time to try buckwheat groats.
Buckwheat groats are a grain-like, gluten-free, wheat-free seed that can be used in cereals, granola, and as a topping for your yogurt or chia sees parfaits.
Note: There are 2 cooking times and methods, depending on your time needs. I prefer the lower temperature with longer time.
Preheat oven to 150ºF or to 300ºF for less time. Soak buckwheat groats in a large bowl of water for at least 1 hour. Rinse and drain, then place in a clean, large bowl. Add remaining ingredients and stir to fully cover the groats.
Spread groats on to a large cooking sheet (you can spread directly onto the sheet or line with parchment paper). Make sure they are in a single layer so they cook evenly.
Place in your oven and bake. If you have the temperature at 150ºF, bake for 1 hour. If your temperature is higher, at 300ºF, bake for about 15–20 minutes. You don’t want your groats to burn or get to crunchy, as they will be hard as rocks and not easy to eat.
When they are baked, allow to cool and transfer to a bowl to eat or to a jar to store them. I use a Mason jar and keep them in the fridge. They will stay for 1–2 weeks in the refrigerator.
