Delicious, healthy recipe bursting with fall flavors that will keep your dinner guests asking for more. Gluten-free and good in any season. My family loves this!
Preheat oven to 350°F.
Combine cranberries and cider in microwave-safe bowl; microwave on high for 1 minute. Remove it from the microwave and it let stand for 10 minutes.
Using an apple corer, core the apples but don’t cut all the way through. Using a small spoon, carefully scoop out center of apples, or use a knife and cut out the center of the apples, leaving a 1/2 inch-thick shell. Chop the apple flesh and set aside. Brush the inside of the apples with 1 teaspoon butter. Place apples on a baking sheet, and bake at 350°F for 25 minutes or until just tender. Then remove the apples from the oven and set aside.
Preheat broiler to high.
Heat a large skillet over medium-high heat. Add turkey and sauté 5 minutes, stirring to crumble. Remove turkey from pan; drain grease. Wipe out the skillet then add remaining butter into the pan. Add chopped apple, yellow onion, carrot, ground cinnamon, and red pepper; sauté 4 minutes. Add garlic; sauté for 1 minute, stirring constantly. Add turkey and the cranberries/cider mixture into the pan. Stir to combine all ingredients in pan and let it cook for a couple minutes.
Divide mixture evenly among apples. Broil for 5 minutes or until golden.
