This bacon, lettuce, and tomato salad is complemented with avocado and a sunny side up egg. High in protein, it’s gluten-free and grain-free, but with all the deliciousness of a good old-fashioned BLT sandwich.
Tuck lettuce leaves into bowls. Fry bacon in pan until crispy. Once bacon is cooked through, pat it with a paper towel, crumble, and set aside.
In a small skillet, fry eggs sunny side up. If you want to prepare them the way The Gram did, fry the eggs in the bacon grease.
Layer the lettuce bowls with bacon pieces, tomatoes, and avocado. Top each salad with an egg. Add a dash of pepper.
Serve immediately.
