Two super-stuffed tacos make a filling and tasty meal, and the carbs and calories are very low. These simple low carb/keto tacos using Aunt Rocky’s All Purpose Tortillas. Change them up any way you like to suit your own taste. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten-free, dairy-free (omit cheese and sour cream, or use dairy-free versions).
Note: This recipe requires that you have already made a batch of Aunt Rocky’s All Purpose Tortillas. See separate recipe in my TK Recipe Box for those. I keep a batch in the freezer, and just pull some out when I want to use them.
In a nonstick pan, warm tortillas. Keep turning and warming them until they no longer steam. The dryer they are, the better they taste. Just don’t burn them.
Move tortillas to serving plate. Layer 1/2 of each of the remaining ingredients on each tortilla.
Garnish with cilantro, if desired. Serve.
