Finally, a Thai Sweet Chili Sauce that is both sugar free and easy. This sauce can be made up in just 5 minutes. And with only 2 calories and zero net carbs, use as much as you want! Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, nut free, Paleo option.
Using a 2-cup measuring cup, stir together the chili garlic sauce, vinegar and sweetener. While stirring, slowly sprinkle the glucomannon or xanthan gum over the top, keep stirring until blended in.
Add water up to the 2-cup mark on the measuring cup. Stir again. Let sit on counter for 15 minutes or so, to thicken.
Stir one more time, and pour into storage container with tight fitting lid. Store in pantry or refrigerator for several weeks. The vinegar serves as an antimicrobial, so it should be shelf stable (as is the commercial version) for a long time.
Yields 2 cups, or 16 servings of 2 tablespoons each.
Notes:
1. The chili sauce is readily available in the Asian Foods section of supermarkets.
2. Use unseasoned rice vinegar only (zero carbs).
3. Substitute any sweetener you like to taste. If not a zero carb sweetener, be sure to count the added carbs.
4. The glucomannan or xathan gum are needed to thicken the sauce.
