This 10-minute dessert can be served immediately, or made ahead. Use any berry and extract combination you like with the same result. Kefir cheese adds lightness and creaminess to this mousse that cream cheese desserts lack, and kefir cheese is a great source of important probiotics. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free. CKD/Renal diet friendly.
Put all ingredients except the strawberries in a medium mixing bowl. Use a stand or hand mixer to slowly mix all ingredients until smooth. Add strawberries, and increase mixer speed to high and continue mixing about 1 minute, or until mixture becomes light and fluffy.
Transfer to a large serving/storage container, or divided into half-cup containers with lids. Refrigerate until ready to serve.
May be frozen. Defrost on counter for about 1/2 hour.
