A quick worknight low carb noodled dinner that can be made with ingredients from the freezer and pantry. Or make ahead and reheat when you are short on time to cook dinner. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free, coconut free, CKD, Low Potassium, Low Sodium.
Rinse and drain the shiratake noodles. Set aside on paper towels to drain as much as possible until needed.
In a large skillet, defrost the Mushroom Medley according to package instructions.
When the mushrooms are fully defrosted, add the butter and stir until melted.
Add the milk substitute, cream, marsala, Herbs de Provence, pepper, and glucomannan or xanthan gum. Continue cooking over medium heat until sauce bubbles and thickens a little.
Add the spinach, and cook another minute or two until it wilts. Add the chicken and noodles. Continue cooking over medium-low heat just until heated through. Remove from heat, mix well and serve.
Store leftovers in refrigerator. Freezing not recommended if using any brand of shiratake/konjac/glucomannan noodle.
Notes:
• If you don’t have fresh spinach on hand, defrost and drain some frozen spinach, or other vegetable. Drain well, and add that. Count additional carbs if applicable.
• The Zeroodle Shiratake Noodles with Oat Fiber are available from several online stores. They are much better than the regular shiratake noodles found in grocery stores. If you can’t find them, substitute your favorite low carb noodle, adding any calories and carbs related to your choice of noodle. (The Zeroodle noodles are zero net carbs per serving).
