Whether it’s Valentine’s Day or not, chocolate strawberries are always a fun and tasty treat. Extremely low calories and carbs, too. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, nut free, Paleo, CKD, Renal Diet, Low Sodium, Low Potassium.
Chill strawberries thoroughly before beginning. I put mine in the refrigerator overnight before dipping them.
Line a small cookie sheet with waxed paper. If you have time, chill the cookie sheet before beginning.
Break up chocolate into small pieces a small custard cup or ramekin and add coconut oil. Melt chocolate and coconut oil together in the microwave on full power. Start with 30 seconds, stir and allow to sit for a couple of minutes to see if the rest of the chocolate melts on its own. It’s easy to burn chocolate in the microwave oven, so you don’t want to cook it any more than necessary. If you still have unmelted chunks, put back in microwave for 10 seconds, stir again, and wait again if necessary.
Once chocolate is melted, add sweetener and stir well.
Hold each chilled strawberry by the stem (or use a toothpick) and dip in the chocolate. Hold up over the bowl and allow excess to drip off. When the dripping stops, place the strawberry on the waxed paper covered cookie sheet. Repeat with remaining berries.
Place cookie sheet with berries back in the refrigerator for an hour or so to be sure the chocolate has completely solidified. Serve.
Store leftovers in the refrigerator for a couple of day. Do not freeze.
