A single-serving simple cole slaw with zero carb dressing (no mayonnaise). This recipe can be multiplied easily to serve any number of people. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, nut free, Paleo (use honey for sweetener).
Mix all ingredients, and serve.
Coleslaw may be made up in advance and stored in the refrigerator until ready to serve. Best served the same day it’s made, but will keep well overnight.
