Description

I’ve tried so many biscuit recipes, and honestly this one the closest thing to a traditional biscuit I have had since going low carb and grain free! They’re quick to make, and require very few ingredients. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, low potassium, CKD & Renal Diet if salt omitted, nut free option, dairy free/Paleo option.

Ingredients

  • 1 cup Almond Flour (Sesame Flour For Nut Free)
  • 2 Tablespoons Almond Flour (Sesame Flour For Nut Free)
  • 1 teaspoon Gluten Free Baking Powder
  • 1 teaspoon Lifesource Oat Fiber (See Notes)
  • ¼ teaspoons Salt
  • ½ teaspoons Glucomannan Or Xanthan Gum (See Notes)
  • 2 Tablespoons Cold Salted Butter (Cold Coconut Oil For Dairy Free Or Paleo)
  • 3  Large Egg Whites (See Notes), Whisked

Preparation

Preheat oven to 400ºF. Generously grease a 6-well muffin pan, set aside. Or grease a small baking sheet, if making drop biscuits.

In a medium mixing bowl, whisk the almond flour, baking powder, salt, oat fiber, and glucomannan until there the lumps are broken up. Cut in cold butter with a pastry cutter, two knives, or a fork until dough is crumbly. Set aside.

In a small mixing bowl, whisk egg whites until very frothy. Add frothy egg whites to the dry ingredients and mix gently with a knife just until the egg whites are incorporated. Don’t over mix, or try to get a smooth dough.

Divide into 6 muffin wells, or drop on baking sheet as 6 drop biscuits. Smooth top a little, if desired. Bake for 20 minutes, or until tops are lightly browned. Serve warm or cold.

Notes:
1. I have not tried the recipe with liquid egg whites. I don’t know if any egg substitutes will work here.
2. Glucomannan (or xanthan gum) serves as the “glue” for this recipe, and is needed to keep the biscuits from being crumbly.
3. Oat fiber is not a grain, it is 100% fiber. It is used in low carb baking to add a bread-like mouthfeel. Omit if you choose not to use it. I use Lifesource to assure a gluten-free product.
4. Butter (or coconut oil) must be cold.
5. These biscuits will make a great shortcake for strawberries. Add 1 tsp. granular sweetener.
6. Use the 3 leftover yolks to make Aunt Rocky’s Banana Pudding (or any flavoring). See recipe on Tasty Kitchen.
