Description

The perfect quick and easy vegan pick-me-up!

Ingredients

  • ¾ cups Almond Butter, At Room Temperature
  • ½ cups Maple Syrup
  • 1 Tablespoon Flax Meal
  • 1-½ teaspoon Pure Vanilla Extract
  • ½ teaspoons Cinnamon
  • 1 dash Salt
  • 2-½ Tablespoons Vanilla Protein Powder, Plus A Little More If Needed
  • ⅓ cups Gluten Free Oats

Preparation

In a medium-sized bowl, combine the almond butter and maple syrup until smooth. Add the flax, vanilla, cinnamon and salt. Mix to combine. Add protein powder, 1 tablespoon at a time to fully incorporate. If you find your dough is too oily, add another teaspoon or so. Add the oats and mix well.

Roll into small balls. Enjoy immediately or store covered in the fridge. Balls will firm up slightly when chilled.

Makes 10-12 Energy Balls.

Sorry we didn’t see this sooner! Your almond butter may have been super oily. Maybe you added too much of that? You can add more flour or protein powder in the future. Not sure why they would not have held up but I am glad they were still yummy! Thanks for trying them out. :)

I added probably twice the amount of protein powder as called for, and a bit more oats, and have refrigerated them for over 2 hours now, and they are still incredibly soft and barely holding their form… I was hoping to pack them for a snack at the Soccer match, but I don’t know if they’ll transport well. Any suggestions? They’re really yummy though! :-)
