Description

This healthy paleo ‘spaghetti’ with a creamy pesto dressing is rich in nutrients, a raw food and low in fat.

Ingredients

  • 5 whole Zucchini
  • 3 whole Avocados
  • 1 bunch Basil
  • ½ cups Pine Nuts
  • ½ cups Pamesan Or Vegan Parmesan Cheese
  • 1 clove Garlic
  • 2 Tablespoons Olive Oil
  • 1 pinch Salt
  • 1 pinch Black Pepper

Preparation

Spiralize zucchini and set aside.

Put remaining ingredients in a blender and blend until smoooth, adding more olive oil if necessary to produce a runnier dressing.

Pour the dressing over the zucchini, mix, arrange on a plate and enjoy!
