Description

A very healthy peanut butter cookie recipe.

Ingredients

  • 3-½ cups All-purpose Flour
  • ½ teaspoons Salt
  • 1-½ teaspoon Baking Soda
  • 1 cup Unsweetened Applesauce
  • 1 cup Crunchy Peanut Butter
  • 2-½ cups Brown Sugar, Packed Firmly
  • 2 whole Egg Whites
  • 2 teaspoons Vanilla

Preparation

In a small bowl, combine flour, salt and soda; set aside. Thoroughly mix together remaining ingredients. Add dry ingredients, mixing until combined. Drop by rounded measuring teaspoonfuls onto cookie sheets coated with nonstick cooking spray. Bake at 375ºF for about 10 minutes or until light golden brown. Cool on wire racks.

These are just as described – chewy! Not the texture of my regular pb cookies, but extremely tasty! I used regular pb instead of crunchy since I have one child who doesn’t like nuts. I added chocolate chips to the last bit of batter (my husband’s idea) and they were very good as well (that might blow the “low fat” thing though).
