I was inspired by the Penzey’s catalog to try this. I’ve tweaked it a bit to add more herbs and convert it to low carb. So yummy!
Preheat oven to 350ºF. Combine the veggies, seasonings, and cheddar. Place in a 1 1/2 quart casserole dish, top with parmesan, and bake 40 minutes or until squash is tender.
So simple, but so very delicious! My husband doesn’t care for squash, but I can get him to eat this. Everything’s better with cheese!
