This cheesy mashed cauliflower makes such a wonderful, creamy and flavorful side that is low carb and simple! It’s so perfect to complement any meal.
Bring a pot of water to a boil and season it with 2 very generous pinches of salt. Add cauliflower florets and boil until completely tender and mashable, for about 30 minutes. Test with a fork to make sure.
Once they are done, drain and return to the pot. Use a potato masher to mash thoroughly, then add remaining ingredients. Stir it all together thoroughly, transfer to a serving dish and serve immediately! Enjoy!
