Description

These Buffalo chicken patties with blue cheese slaw are my lazy version of the infamous pub style wings/tenders. No fryer needed! No dipping, dredging, or breading necessary! Same great flavors!

Ingredients

  • FOR THE PATTIES:
  • 2 pounds Lean Ground Chicken
  • ¼ cups Crumbled Blue Cheese, Use More If You Prefer A Zestier Taste
  • 1 whole Egg, Beaten
  • ¼ cups Breadcrumbs
  • 1 Tablespoon Powdered Ranch Dressing Mix
  • Frank's Red Hot Sauce, As Much As Desired To Coat The Patties
  • FOR THE SLAW:
  • 12 ounces, weight Broccoli And Carrot Coleslaw Mix, Bagged
  • 1 jar Prepared Blue Cheese Salad Dressing, 12-16 Ounce Jar, As Desired
  • ½ cups Crumbled Blue Cheese

Preparation

For the patties:
Combine chicken, blue cheese crumbles, egg, breadcrumbs, and ranch powder in a large bowl. Mix well. Divide into 8 sections, and pat each section into a patty (make them a little thinner in the middle, as they will expand when cooked). If mix is too sticky, lightly dampen hands while shaping.

Heat a large nonstick skillet over medium-high heat. Add burgers to the hot pan, cook 4-5 minutes on one side (until nicely caramelized and browned), flip and cook the other side for an additional 4-5 minutes or until the juices run clear and no visible pink remains in the middle. Remove patties from the skillet onto a plate.

Toss patties in hot sauce, using the desired amount that works for you. Serve atop the blue cheese slaw with additional blue cheese dressing and blue cheese crumbles.

For the slaw:
Divide slaw up amongst serving bowls. Toss with a spoonful of blue cheese dressing—use your judgement to dress it to your liking. Divide up the blue cheese crumbles, sprinkle over the slaw.

Makes 8 servings.
