Description

A cookie you can feel good about eating for breakfast!

Ingredients

  • 1 whole Large Banana, Mashed
  • ½ cups Reduced Fat Peanut Butter, Creamy Or Crunchy
  • ¼ cups Honey
  • ¼ cups Unsweetened Applesauce
  • 1 teaspoon Vanilla Extract
  • ¾ cups Whole Wheat Flour
  • 1 cup Rolled Oats
  • 1-½ teaspoon Cinnamon
  • 1 pinch Salt
  • ½ teaspoons Baking Soda
  • ½ cups Raisins Or Dried Cranberries (optional)

Preparation

1. Preheat oven to 350ºF. In a large bowl, combine the banana, peanut butter, honey, applesauce, and vanilla extract.
2. In a separate bowl, combine the flour, oats, cinnamon, salt, and baking soda. Stir the dry mixture into the wet mixture until well-combined. Stir in the raisins or dried cranberries.
3. Prepare a large baking sheet with parchment paper (or spray with nonstick spray) or a baking mat. Drop the dough onto the pan using a 1/4-cup measure. Leave approximately 3 inches in between each cookie. Wet a spatula and flatten down the mounds of dough so they are about 1/2 inch thick.
4. Bake for 15 minutes or until browned.

Note: if you want your cookies sweeter, add another 1/4 cup of honey to the recipe.

I have made these twice and am trying to get them more crunchy and less cake-y. Great recipe and if you like your cookies soft and chewy, no adjustment required. I make them with wow butter (a soy butter) instead of peanut butter so I can send them to my kids’ peanut-free school in their lunches. I love that there’s some protien and not a lot of sugar in them!

What a great recipe! Not too sweet and great texture. I added chopped Walnuts instead of raisins.
