Description

Zero carb jelly in just a few minutes! It’s so easy to make, and the flavor possibilities are endless using any ready-made sugar-free syrups (Torani, etc.). Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, sugar free, dairy free.

Ingredients

  • 2 teaspoons Calcium Water (See Notes)
  • 2 teaspoons Pomona's Universal Pectin (Sugar Free Pectin)
  • 2 cups Walden Farms Strawberry Syrup (Or Any Sugar Free Syrup, See Tip)
  • 1 teaspoon Alcohol Free Strawberry Exrtact (Or Other Flavor To Compliment Syrup Used)

Preparation

This recipe makes 2 cups of jelly. Prepare containers with good sealing lids, set aside.

Make the calcium water following the instructions in the box of pectin, set aside (all needed ingredients are in the box).

Bring syrup to a boil in a 4-cup measuring cup in the microwave, or a small pan on the stove. Transfer hot syrup to blender with at least 4-cup capacity. Add pectin, vent lid slightly, blend 1 minute or until powder is dissolved. Pour syrup back into the measuring cup or pan you just used. (Do not add the calcium water to the hot syrup in the blender. It will begin to gel right away, and it will make the blender hard to clean.)

Add flavor extract and calcium water. Stir well. The mixture should begin to gel a little bit right away. If not, add 1 teaspoon more of calcium water. It will gel completely when cooled and chilled.

Fill containers to 1/2 inch from top. Skim off any air bubbles with a clean spoon. Allow to cool, put on tight sealing lids. Refrigerate or freeze immediately.

Store in refrigerator for several weeks, or in freezer for up to one year. Thaw on counter.

Yields 2 cups jelly or 16 servings of 2 tablespoons each.

Nutrition: Zero carbs, fats, protein, or calories per serving.

Notes:
• This recipe can be used with Torani sugar free flavor syrups, or any other sugar free flavor syrup. Be sure to check carb and calorie counts for whatever you substitute.
• The box of Pomona’s Universal Pectin includes the calcium powder and simple instructions for making calcium water. This is necessary to create a gel. The extra calcium water may be refrigerated or frozen for later use. I’ve kept it in my refrigerator for nearly a year without it going bad. If you can’t find Pomona’s Universal Pectin in a local grocery or health food store, it is available on Amazon.
