A truly crispy chaffle suitable for dips and moist toppings. The crispy fried sharp cheddar gives so much flavor! Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten-free, grain free, sugar free, nut free, coconut free, low potassium, low sodium, CKD/Renal Diet, egg fast.
Heat chaffle or waffle maker. Lightly spray with olive oil only if needed (I don’t spray mine).
Mix all ingredients in a small measuring cup. Pour 1/2 of the mixture into the Dash Mini Waffle Maker, or if using a full size waffle maker, pour evenly into 2 wells.
Cook until barely any steam is coming out of the waffle maker. I pay no attention to the “ready” light. The longer you cook these, the more they crisp up. Just watch the steam, and when it stops check for a nice deep golden color before removing from waffle maker.
Remove chaffles to a wire rack to crisp a little further while you prepare dips or toppings. When cooled and crisp, cut into four strips each.
Yields 2 servings of 4 strips each (1 chaffle).
Notes:
• I like to serve these with olive tapenade, cheese sauce, or guacamole as appetizers. Or leave whole and top with tuna salad or egg salad for a lunch.
