Fried radishes make an easy, tasty and colorful low carb side for any meal. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, nut free, coconut free, Paleo, CKD, Low Potassium, Low Sodium, Renal Diet.
Wash and dry the radishes, trimming off the stem and root. Slice radishes about 1/4 inch or a little thinner.
In a large nonstick skillet, melt coconut oil. Add radishes and diced onions. Cook over medium to medium-high heat, stirring and turning every few minutes until radishes are cooked through and well browned. Add garlic, salt and pepper, and cook for another minute.
Remove from skillet and serve.
Notes:
• If you have leftovers, they are very good used as an addition to scrambled eggs, omelettes, or mixed with other leftover vegetables.
