Keep this Keto Hot Cocoa Mix in your pantry, office, or suitcase for a nice cup of hot chocolate or cafe mocha any time and anywhere. Just mix with boiling water. It makes a great gift for anyone on a sugar free or dairy free diet. Suitable for Atkins, Keto, LCHF, Paleo (see notes), low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, nut free, low potassium, low sodium, CKD/Renal Diet.
I strongly recommend putting all of the dry ingredients through a sieve or sifter. The coconut milk powder has some moisture, and is prone to clumping. Once sifted, whisk all ingredients together. Transfer to a storage container with an airtight lid. Store in pantry, office, or take along when you travel.
Yields 30 tablespoons of mix, or 10 servings of 3 tablespoons each.
To make a cup of hot cocoa, add 3 tablespoons of the mix to 8 ounces of boiling water. Stir until dissolved. Taste for sweetness, add liquid sweetener if desired.
For a creamier cocoa, add 1 tablespoon heavy whipping cream to the cup before serving, or top with sugar free whipped cream.
For a cafe mocha, add 1 teaspoon instant coffee to your cup. Or add 2-3 tablespoons of this mix to your brewed coffee. Add more sweetener if desired.
