Description

Perfect little fat bombs or light dessert bites for fall and winter, the flavors of holiday cheesecake in a single serving. Use any sugar free cranberry sauce or sugar free jam you prefer. These take only minutes to make, and are stored in the freezer. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free, coconut free, CKD, Low Potassium, Low Sodium, Renal Diet.

Ingredients

  • 4 ounces, weight Philadelphia Cream Cheese Original, Softened
  • 4 ounces, weight Bel Giosio Mascarpone, Softened
  • ½ cups Butter, Softened
  • ¼ cups Swerve Confectioners Or Other Powdered Sweetener (See Notes)
  • ½ teaspoons Vanilla Extract
  • 2 Tablespoons Aunt Rocky's Sugar Free Cranberry Orange Sauce (See Notes)

Preparation

Cover a small cookie sheet with waxed paper, set aside. (I used an ice cube tray to make the clouds I photographed, but I don’t recommend doing it that way. They turn into a frozen brick that must be defrosted before eating.)

Bring cream cheese, mascarpone and butter to room temperature (or soften in microwave in 20 second increments until everything is just starting to melt). Whisk them all together until creamy and smooth. (You’ll get a smoother result if you soften everything separately, but I don’t bother doing that, so I usually have some tiny beads of cream cheese. It doesn’t affect the taste at all.)

Add the powdered sweetener and whisk again. Stir in the cranberry sauce. Pour or spoon into 1 tablespoon candy molds of any shape. If you don’t have molds. Refrigerate the mixture until it is stiff enough to scoop onto waxed paper in 1 tablespoon mounds. Place in freezer for at least an hour, or until fully set and hardened.

Remove from freezer when fully set, and transfer to a freezer bag or covered freezer container. Can be eaten frozen, or bring to room temperature for about 10 minutes if you want them softer. Store in freezer or they will get too soft to pick up.

Yields 24 pieces.

Notes:
• This is a great way to use left over cranberry sauce from Thanksgiving. I do not recommend using granulated sweeteners in this recipe, or you may have a grainy result, rather than smooth and creamy.
• Aunt Rocky’s Sugar Free Cranberry-Orange Sauce is a separate recipe on Tasty Kitchen. You may use any sugar free cranberry sauce, or even a sugar free jam (melted) in this recipe.
