This is very easy, very versatile, and very good. It freezes well, and the variations are endless. I’m telling you, try it, you won’t be sorry!
Over medium heat, brown the hamburger and diced onions with salt and pepper to taste. Once the meat is browned, drain grease if needed. Mix chili powder into hamburger, then mix flour into hamburger mixture until all of the meat is coated. Add enchilada sauce, tomato sauce and water. Bring to a boil and let simmer until thickened, about 10 minutes.
Optional serving suggestions: serve over corn chips, rice, tortilla chips, serve with grated cheese, sour cream, lettuce, tomatoes, avocados, diced green chilies, lime wedges, etc. You could also use cooked chicken or ground turkey in place of the hamburger. The possibilities are endless.
