Description

Yummy real chili with no beans. If you must add beans, don’t add them until after the first 30-minute simmer.

Remember, these are my taste for spices and are just a starting point. Be your own chef!

Ingredients

  • 1 pound Ground Beef, Lean
  • 1 pound Ground Pork Sausage (ie Jimmy Dean)
  • 1 whole Onion, Sliced (I Use Sweet Onions)
  • 3 cloves Garlic, Minced
  • 2 cups Chicken Broth, Water Or My Favorite, Beer
  • 6 ounces, weight Tomato Paste
  • 1 Tablespoon Cumin
  • 2 teaspoons Paprika
  • 1 teaspoon Oregano, Dried
  • 1 teaspoon Salt
  • ½ teaspoons Cayenne
  • 2 Tablespoons Masa Harina Or Cornmeal
  • ½ cups Warm Water

Preparation

Brown meats and onion together in a large 12-inch skillet and drain well. Add garlic, stir 2 minutes. Mix together the broth (or water or beer) and the tomato paste. Add to the cooked meat. Mix well. Add all other ingredients except cayenne pepper, masa, and the 1/2 cup warm water. Simmer 30 minutes.

Add cayenne pepper (you can always add more later). Mix masa and ½ cup warm water. Add to the chili and stir well.

Simmer 20 minutes. Adjust seasonings at this point. If you like more of anything, do it now or forever hold your peace! Simmer up to 2 more hours, just be sure to stir every 30 minutes.

Serve with the normal chili accompaniments: sour cream, cheese, additional onion, lime. Whatever floats your boat!

Note: this is a yummy topping for Frito boats, potatoes or as a filling for burritos.
