This is my favorite go to soup on a rainy day when I don’t have much time. The great thing about it is that it can be changed up to your tastes and still be great.
If you are making this in a crock pot throw everything (raw beef, taco and ranch seasoning, diced tomatoes, green chills, black beans, corn and green chili enchilada sauce) into the crock pot and cook on low for 6 hours.
If you are in a hurry throw everything but the meat (taco and ranch seasoning, diced tomatoes, green chills, black beans, corn and green chili enchilada sauce) into into a large pot on medium heat. Brown the meat separately and drain off excess fat. Add the meat to the rest of the ingredients and heat for 20 minutes.
If the soup turns out too thick add more green chili enchilada sauce until desired thickness is achieved.
Serve with shredded cheese, tortilla strips and sour cream.
