Description

A delicious and spicy chili that is a family favorite.

Ingredients

  • 1 pound Bob Evans Zesty Pork Sausage, Other Spicy Sausage Or Ground Pork
  • 1 whole Onion, Diced
  • 1 teaspoon Cumin
  • 2 teaspoons Chili Powder (needed If Using Plain Sausage Or Ground Pork)
  • 2 cans (15 Oz. Size) Kidney Beans, Drained
  • 1 can (15 Oz. Size) Corn, Drained, Or A Similar Amount Of Frozen Corn Or Peas
  • 2 cups Chicken Broth
  • 15 ounces, fluid Tomato Sauce
  • 1 can Mushrooms (4-8 Ounce Can, Optional)

Preparation

In large saucepan, brown pork with onion; stir in cumin (and chili powder if using plain pork). Stir well. Add remaining ingredients and bring to a boil. Cover and simmer for 15-20 minutes until heated through and flavors are blended.

Slow cooker option: after browning pork with onion and spices, transfer to slow cooker with remaining ingredients and cook on low 4 to 8 hours.

You got a winner!
I made a double batch.
Added a little more chili powder and a little less chicken broth.
I couldn’t keep my husband out of it.

I was making it for tomorrow.
Since he was enjoying it so much — he kept “testing” it for me — I asked him if he’d like it for today.
He did.
He was a happy boy (grandpa).

This was super easy and super tasty! I added extra tomato sauce and corn to make a bigger batch, and played with the spices a bit to get it more flavourful. Really liked some garlic powder and paprika in there and bumped up the cumin. I’m really enjoying it with some corn bread!
