This is an amazingly flavorful turkey chili and a favorite among my friends and family. I even won a chili cook-off against my co-workers with this recipe. It has some spice to it but you can add more or less jalapenos and cayenne depending on the level of heat you enjoy.
Prep the pasilla peppers, anaheim pepper, jalapeno peppers, red bell pepper, green bell pepper, onions and garlic as directed on the above list.
Warm the oil in a large pot over high heat. Once oil is hot add the peppers, onions and garlic and cook until onions are caramelized, about 8 minutes.
Add the ground turkey and cook until the meat is no longer pink, about 5 minutes. Stir gently while trying not to break up the meat too much.
Then add the tomato paste and tomato sauce and stir for 5 minutes. Add the chicken broth and all of the spices and mix to combine. Then stir in the beans and their liquid.
Lower the heat and cook uncovered for at least an hour. Serve and enjoy!
