Chunky chili with stew meat, semi-homemade.
Chop onion, bell peppers & jalapenos and mince garlic. Set aside.
Liberally salt & pepper stew meat. Heat olive oil in dutch oven or large soup pot, add stew meat in batches to brown on all sides. Be sure not to over crowd the pot.
Once all the meat is browned, return to the pot and add the beer. The beer should almost cover, if not fully cover all the meat. You might need a little less than 2 bottles or a little more. Simmer the meat & beer for one hour on low heat.
After one hour of simmering meat add the chili magic, diced tomatoes and the chopped veggies. Stir to combine all ingredients. Cover and simmer on low heat for another hour. The meat & veggies should be very tender and yummy.
Top with shredded cheese and enjoy!
