A delicious chili that only needs a few ingredients and is quick to prepare. Great for cold days.
Saute jalapeno and onion in a deep pot with a drizzle of olive oil and a dash of salt. Add ground beef when vegetables are tender. Cook until beef is browned, then put the beef mixture on a plate and drain the grease. While the beef/vegetable mixture is draining, add tomatoes (undrained), beans, and chili-o mix to the pot and stir to combine. Add beef to the mixture and stir. You may also add Tabasco sauce or cayenne pepper to increase the heat. Cut the heat to medium/medium low and cover the pot for 20-30 minutes or until the sauce has thickened. Garnish with cheese, sour cream, chives or Tabasco sauce.
