Not really sure what to call this, you say chili and people automatically think one thing, but it has the tomato base similar to a chili and contains beans, yet no spice and a whole lot healthier. One of the few things for which I can get all the ingredients in Spain, as it is super simple.
Saute the onion in the bottom of a large soup pan with the olive oil. Once the onions are brownish, add in the ground turkey; cook until brown. Once the turkey is cooked, add in the garlic, beans and tomatoes. Let it cook for 1-2 hours.
In the mean time cut up all the veggies in small blocks. Make sure you peel the butternut squash (although it is not required) and be sure, of course, to scoop out the seeds and center and throw that away.
After 1-2 hours, add in the veggies (squash, pepper, zucchini) and cook for an additional 45 minutes until they are cooked throughly.
Serve as desired, though I recommend a dollop of sour cream and some cheese. Enjoy!
