A delicious chili recipe that uses chicken instead of ground beef. A lovely hearty meal.
Chop the onion, bell pepper and chicken breast into little pieces. Heat some olive oil in a saucepan over medium heat and fry the onions and garlic for about 2 minutes. Add the chicken cook the chicken for about 4 minutes, or until it´s not pink on the outside any more. Add the bell pepper and fry it for another 4 minutes, while you keep stirring it. Add the beans and spice mix and a tablespoon of water. Let the chili simmer for about 5 minutes.
Chop the tomatoes and add them to the chili when it´s done and you´ve taken it off the stove.
Pour the chili into bowls and sprinkle the grated cheese on top. Top it off with creme fraiche and guacamole. You can sprinkle some chopped parsley on top if you like.
