Description

An easy, healthy version of chili that my family and friends love (and yours will too!).

Ingredients

  • 1 pound Ground Turkey
  • 1 package (about 1 Oz. Packet) Taco Seasoning (or Homemade)
  • 1  Medium Onion, Diced
  • 1 stalk Celery, Diced
  • 1 cup Frozen Corn
  • 1 can (15 Oz. Size) Black Beans
  • 2-½ cups Low Sodium Chicken Stock
  • 1 can 15 Oz Stewed Tomatoes Cut Up
  • 1 can 10 Oz Mild (or Medium) Enchilada Sauce
  • 2 Tablespoons Cornmeal

Preparation

Brown your ground turkey with the taco seasoning. Drain the meat and place in the crockpot with all other ingredients except the cornmeal. Cook on low for 6 hours. When you’re about ready to eat, throw in the cornmeal. Cook for another 20 minutes. This will thicken up the chili nicely.
